I am grateful to Diane Wendell for reminding me of this simple and easy crockpot chicken recipe.
1 pound of chicken
1 jar of salsa (large jar – I prefer medium, hubby prefers mild)
1 can whole kernel corn, drained
1 can of black beans, drained
Put everyone in the crockpot on high for about 6 hours. The chicken will fall apart it will be so tender. You can shred it to use on tacos or make rice bowls. There is always some left over so we freeze it for another meal or lunch.
