Tasty Tuesday: Peanut Butter Blossoms

Everyone loves these cookies topped with Hershey’s kisses chocolates.  Fun, each and full of peanut butter flavor, they are a must for any holiday baking list.  These have ALWAYS been one of my favorites

PREP TIME : 20  MINUTES

INGREDIENTS

  • 48 HERSHEY’S KISSES Brand Milk Chocolates
  • 1/2 cup shortening
  • 3/4 cup REESE’S Creamy Peanut Butter
  • 1/3 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup additional granulated sugar for rolling

DIRECTIONS:

1. Heat oven to 375°F. Remove wrappers from chocolates.
2. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
3. Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
4. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely. Makes 48 cookies.

Tasty Tuesday: Mexican Quinoa Bowl

This healthy, gluten-free recipe is a one-pot wonder which comes together in a snap! Skip the sour crean and it becomes a great vegan option.

INGREDIENTS

  • 1 cup (250 mL) uncooked quinoa
  • 1 cup (250 mL) vegetable broth
  • 1   orange or red bell pepper, stem removed, seeded
  • 1   medium zucchini, ends trimmed and cut into 3” (7.5-cm) pieces
  • 1 cup (250 mL) fresh corn kernels (about 2 ears)
  • 2   garlic cloves
  • 1 can (15 oz/425 g) low-sodium black beans, drained and rinsed
  • 1 can (14.5 oz/411 g) fire-roasted diced tomatoes, undrained
  • 1-2 tbsp (15-30 mL) Tex-Mex Rub
  • ¼  cup (50 mL) fresh cilantro leaves
  •  Diced avocado, sour cream and lime wedges (optional)

DIRECTIONS

  1. Combine the quinoa and broth in the Deep Covered Baker. Cover and microwave on HIGH for 10 minutes.
  2. Meanwhile, cut the bell pepper into quarters and the zucchini in half lengthwise. Using the Quick Slice, cut the bell pepper (skin-side up) into strips. Slice the zucchini halves crosswise.
  3. Remove the baker from the microwave. Stir in the vegetables, garlic pressed with the Garlic Press, beans, tomatoes with juice, and rub.
  4. Microwave, covered, for 8–10 minutes, or until the quinoa has absorbed the liquid.
  5. Remove the baker from the microwave and let it stand, covered, for 5 minutes.
  6. Snip cilantro in a small bowl with the Professional Shears.
  7. To serve, sprinkle the quinoa with cilantro and top each serving with avocado and sour cream, if desired.

Yield:  5  servings of 1 1/2 cups (375 mL)

Nutrients per serving:

Calories 230, Total Fat 2.5 g, Saturated Fat 0 g, Cholesterol 0 mg, Sodium 660 mg, Carbohydrate 46 g, Fiber 9 g, Sugars 8 g, Protein 11 g

Cook’s Tips:

  • 2 tsp (10 mL) chili powder and 1 tsp (5 mL) of ground cumin can be substituted for Tex-Mex Rub.
  • To make this recipe on the stovetop, increase vegetable broth to 1½ cups (375 mL). Combine the quinoa and broth in Rockcrok® Dutch Oven and cover. Bring to a boil over medium-high heat; reduce the heat to a simmer for 10 minutes. Continue as directed in steps 2 and 3. In step 4, bring to a simmer, covered, for 15 minutes or until quinoa has absorbed the liquid. Let it stand 5 minutes. Continue as directed.

Let Go of the Old, Make Room for the New

I have been spring cleaning over the last few weeks….Chasing some of the dust bunnies away and attacking the many “junk drawers” around the house.  I am always amazed at the things I find.  WHY?  Because I can’t believe I held on to them “just in case”.

I am a just in case kind of gal.  When we go on a trip, I pack extra “just in case”.  When we go on a road trip, I pack extra snacks “just in case”.  So, finding things I have kept around “just in case” I need them or someone else will want it is what I seem to do.  I have been reading the book “Simple Abundance: A Daybook of Comfort of Joy” by Sarah Ban Breathnach and I am slowing looking at things a little differently in our home.

Why is it so hard to let go? Whether it’s old e-mail or a worn-out sweater, outdated files or a toxic friendship, sometimes we hold on to things for too long. They serve no purpose but to clutter our lives unnecessarily. Today, I want to challenge you to face your fear of letting go.

There are a few common fears which appear when it’s time to let go of something. What are you hanging on to even though it’s time to let go? Which of these pesky fears is it time to face?

  • fear you won’t have what you need in the future
  • fear of being wrong
  • fear of loneliness
  • fear of regret

Breaking through fear requires one key factor: courage. Courage requires faith and trust  your future will be okay without the thing you are letting go of.  YIKES!  Scary, right?  You can muster up the courage to let go by coaching yourself with questions which will help you get unstuck, such as:

  • What does my intuition tell me about letting go in this situation? Will I follow it?
  • If the thing I fear most happens, what is my plan B?
  • Who could I ask to hold me accountable and encourage me as I let go?

Make a decision. For those of us who are people pleasers, this is tough.  I know, I am one of them.  I second guess myself a million times.  The best thing to do is to carve out some time to do what you need to do. You can do it.  Start with small amounts of time, say 15 minutes, set a timer and when it rings you are done.

The truth is as I have been doing this, I have realized how much time and money has been spent “just in case”.  I see a sale and think “I could use this” then never do.  I see an idea which worked for someone else so I jump in with both feet, only to find out it isn’t me.  May has been full of life reflections for me.  I wonder why it took till the age of 61 to learn some of these lessons.

Toss out the OLD and move on.  You will be surprised several weeks or months later, you never once needed or missed what was tossed, donated or sold. Imagine that!

My challenge to you is this:  Is there something it’s time to let go of?  You know what it is. Muster up the courage and just do it. You’ll feel lighter for it.

Since the summer is quickly approaching, I have come up with a system to ensure the bags are in the car AND I take them in the store when I go shopping.  Once I unpack the totes, I set them by the door so they are in plain sight when I go out to the car the next time.  They are always put in my truck of the CRV.  So, how do I remember to take them with me?  On the days I am grocery shopping, I put my purse in the trunk.  Yup, I can’t go shopping without my purse, so when I open the trunk to get my purse, I pick up my totes.    Sometimes I will place them on the seat next to me.  I don’t know about you but I need to have things written on a list OR right in front of me in order to remember them.
