Tasty Tuesday: Sweet Potato And Buffalo Chicken Casserole

I LOVE spicy food (hot Mexican is my favorite) but I honestly am not  big fan of “buffalo” or hot sauce.  Weird, right?

Serves: 4      Prep: 20 min      Cook: 50 min

Ingredients

2 lbs. boneless skinless chicken breasts, cut into cubes;
5 sweet potatoes, cut into 1/2-inch cubes;
1 tbsp. paprika;
2 tbsp. garlic powder;
6 tbsp. hot sauce;
½ cup olive oil or melted ghee;
1 cup bacon, cooked and cut into pieces;
1 cup green onions, sliced;
Sea salt and freshly ground black pepper to taste;

Directions:

  • Preheat your oven to 400 F.
  • In a large bowl, combine together the olive oil, paprika, garlic powder, hot sauce, and season with salt and pepper to taste.
  • Add the sweet potatoes and chicken, and stir to coat.
  • Empty the bowl into a casserole dish.
  • Bake in the pre-heated oven for 40 to 45 minutes, stirring every 10-15 minutes.
  • Add the green onions and bacon to the dish and place back in the oven for another 5 minutes to let all the flavors combine.

This would be a great casserole to take on the road or to the next pot luck supper.  Keep it hot in Thirty One’s Perfect Party Set Thermal.

Tasty Tuesday: Apple Pie Bites

I don’t like cold weather since I am always cold BUT I do love the Fall.  WHY? Because I can snuggle inside baking and cooking.  I used to do it a lot when Belinda was little BUT I do enjoy it especially for the holidays.   I was going through the recipes trying to decide what to make for Thanksgiving – I get to bring dessert.

I came across this recipe from Blond Cook.  A quick and easy dessert.  I mean who wouldn’t want an awesome dessert in less than 30 minutes.  The best part is it can be made Weight Watcher friendly with just a minor change or two. I am also trying to figure out how to make it gluten free so if you have any suggestions, I would love them!

PREP TIME: 15 minutes.     COOK TIME: 12 minutes.     Serves: 8

Ingredients:

  • 1 (8-ounce) can Pillsbury Original crescent rolls or low fat
  • 1 small Granny Smith apple, cored and sliced into 8 (1/2-inch) slices or fried canned apples
  • 1/4 cup packed light brown sugar
  • 1 teaspoon apple pie spice
  • 3 tablespoon butter, melted
  • 1/2 cup pecans (optional)

Directions:

  • Preheat your oven to 375 degrees F.
  • Line a baking sheet with parchment paper.
  • In a small bowl, combine brown sugar and apple pie spice. Set aside.
  • Melt butter and toss apple slices in butter.  Set aside.
  • Arrange crescent roll triangles on baking sheet lined with parchment paper.
  • Evenly distribute brown sugar mixture onto each triangle.
  • Sprinkle each triangle evenly with the chopped pecans.
  • Place an apple slice on the wide end of each triangle.
  • Wrap crescent roll dough around each apple.
  • Brush each crescent roll with remaining butter.
  • Sprinkle lightly with additional apple pie spice.
  • Bake for 10-12 minutes,
  • Cool for 5 minutes before serving

The November Turkey Trot

Halloween is behind us so the next BIG day is Thanksgiving paired with Black Friday, right?  So let’s kick off November with some Thirty One excitement…

This week’s produce of the week is AMAZING!  It combines the benefits of a thermal tote and cinch sac. The Quick Cinch Thermal has a spacious interior for transporting snacks for the family, groceries and more, as well as an exterior flat pocket for papers, mail, cell phone or planner. The drawstring closure keeps everything safe and secure, and when not in use, it rolls up for easy storage. It is washable and wipeable which makes clean ups easy.  Monogramming and personalization options are available.  Now when you grab one of these, you can take advantage of this month’s customer special – the Medium Utility Tote.

Yes, it is back for this month (actually only till the 21st of November) ONLY!  The best part is with a $35 purchase, you can grab the medium utility tote for $10 and add an insert for $10.  That’s right with just ONE $35 purchase, you can get TWO specials in any combination.  How awesome is that?

You know the BEST way to enjoy this special is by sharing it with your friends, right?  So how about a 31-minute Facebook party – not like one you have ever been to.  I have two options this month: #1 a 31-minute party with just the highlights (and no fluff) or #2 a simple (only 6 posts) easy Facebook event where your friends can order their holiday gifts.

I will still send you a hostess packet so you can share it with your local friends, family and co-workers.  PLUS everyone who orders or hosts a party, will be invited to my VIP Customer Appreciation BINGO event (online) with $200 in FREE products to be given away.

So, let’s recap what you get for just gathering 6 orders (all it takes for a $200 party):

An average Facebook party (with a little help from you) is about $600 which gives you the chance to take advantage of the November Hostess Special:

How many people could you check off your holiday gift list with the free and discounted products you earn for hosting a party?  Maybe even treat yourself to something special.

Have you been crunching numbers to try and figure out YOUR holiday budget?  No time for a part-time job?  You work full-time?  Are a mom taxi 24/7?  What if I told you, you could make up to $1000 and be able to have a debt-free holiday?  Impossible right?  You are thinking not enough hours in your day….. I may be able to help with an invest of $99 by you:

Share the catalog with friends, family and co-workers.  You would do it anyway if you were hosting a party, right?  Why not get paid to help them do their holiday shopping?  What is the worse that could happen?  You have ALOT of your holiday gift shopping done with just an investment of $99.  OR, you could make some money, earn some free product and enjoy a stress-free (okay, maybe not totally) holiday season.

Which would you like to do?

#1 Shop for the product of the week (or any of our amazing product).  Spend $35 and get a Medium Utility Tote and Insert for $20

#2 Gather some friends (via online, Facebook, home, or for coffee/drinks). Earn FREE and discounted products.

#3 Join my team and earn money (and products) for a stress and debt-free holiday season.

The choice is yours?  Which will it be?

Saturday Spotlight: TS Magic Chicken Pizza Crust

WOOHOO!! Time to CELEBRATE the weekend…. What says weekend or football more than pizza, right?  I know LOTS of Tastefully Simple consultants and from each one, I learn something.  I got an amazing recipe from Lisa for Magic Chicken which I shared in July.

At a recent vendor event, Tracey Barolomey told me TS had discontinued their gluten free line.  I was surprised because it was AMAZING but as she explained they could not guarantee there was not cross contamination so they decided to discontinue the line.  What was a girl to do for YUMMY gluten free pizza?

Tracey shared with me this recipe using MAGIC CHICKEN as the crust:

Ingredients:

1 pound magic chicken patted dry and shredded (make it even finer by grinding in a food processor.)

8 – 12 ounces shredded mozzarella

2 eggs

2 tbsp Italian Garlic seasoning

2 tbsp parsley

Parmesan cheese to taste.

Directions:

  1. Preheat oven to 400
  2. Parchment line a cookie sheet
  3. Mix all ingredients together in a bowl until combined well.
  4. Press thin and flat into cookie sheet
  5. Back 20-30 min depending on how crispy you like it
  6. Take out, top with your choice of sauce, cheese and toppings, back in oven until cheese melts

I haven’t tried it yet but I am going to.  My biggest problem is I only do a pound of chicken at a time, I need to do LOTS more so I have leftover chicken as prep for other meals.  Tracey recommends if you are freezing this you do it without toppings.

Tasty Tuesday: Zucchini Enchiladas

Thank you to the Food Network Kitchen for today’s recipe… No tortillas? No problem. Wrap your enchilada filling up in zucchini.

Total Time:1 hr 5 min   Makes: 4 servings (3 enchiladas per person)
Level: Easy (looks like I could even do this so it must be) 🙂

Ingredients

2 tablespoons vegetable oil
4 scallions, sliced (white and green parts separated)
2 cloves garlic, thinly sliced
1 tablespoon chili powder
3 cups shredded rotisserie chicken (skin discarded)
1 1/2 cups salsa (not chunky)
1 cup shredded Mexican blend cheese
3 to 4 medium zucchini
Several dashes chipotle hot sauce, plus more for serving, optional
2 tablespoons sour cream

Directions

  • Preheat the oven to 375 degrees F.
  • Heat the oil in a large skillet over medium heat. Add the scallion whites and garlic and cook, stirring frequently, until soft, about 5 minutes. Sprinkle in the chili powder and cook, stirring, until the scallions are coated and the oil is brick red, about 1 minute. Remove from the heat and stir in the chicken, 1/2 cup of the salsa and 1/2 cup of the cheese. Set aside.
  • Halve the zucchini lengthwise and arrange cut-side down on a work surface. Use a Y-shaped vegetable peeler to shave off ribbons the entire length of each zucchini and as wide as possible (the first few may be too skinny). Make 36 zucchini ribbons total.
  • Lay out 3 ribbons, slightly overlapping to make a rectangle (think of this as your “tortilla”). Pile about 1/4 cup of the chicken mixture down along one of the short ends of the zucchini tortilla and then roll up to enclose the filling. Put in a 2- to 3-quart baking dish. Roll up the remaining zucchini ribbons and filling and arrange in the dish. Top the rolls with the remaining 1 cup salsa. Add several dashes of the hot sauce and sprinkle with the remaining 1/2 cup cheese.
  • Bake until the cheese is melted and the filling is hot, about 25 minutes. Let cool for a few minutes. Thin the sour cream out with a little water and drizzle over the enchiladas. Sprinkle with the reserved scallion greens and serve with more hot sauce if you’d like.

Make a pan (or two) to take to the next tailgate party or covered dish.  You can carry one or two pans in Thirty One’s Perfect Party Set.Why will you love this AMAZING thermal?  The Perfect Party Set expands to hold two 9” x 13” casserole pans inside 2 interior water-resistant thermal compartments.
